INGREDIENTS
1 3/4 pounds new potatoes, washed and scrubbed
1/4 cup butter, melted
1/3 cup chopped fresh parsley
INSTRUCTIONS
Pare a 1 inch strip around center of each potato, if desired.
Cover potatoes with water.
Cover and cook over medium heat for 25 minutes or until tender.
Drain and set aside.
Combine butter and parsley, stirring well.
Pour over potatoes, coating thoroughly.
Serves: 4 to 6
