I always loved the weekends to see what my mom would make. It was always something extra special and this Chicken Cacciatore recipe was one of my favorites.
This is easy to make and you can serve it with pasta, mashed potatoes, or even rice, along with a fresh green salad!
I hope you enjoy it as much as I always did growing up.
INGREDIENTS
1 1/2 pounds boneless skinless chicken breasts, cut into 1/2-inch strips
1 medium onion, sliced into rings
1 medium green pepper, julienned
2 tablespoons vegetable oil
1 can (15 oz) tomato sauce
1 can (14-1/2 oz) stewed tomatoes
2 teaspoons garlic powder
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon pepper
You can serve this with pasta, mashed potatoes, or rice
INSTRUCTIONS
In a skillet, cook the chicken, onion and green pepper in oil until chicken is lightly browned and vegetables are tender. Add tomato sauce, stewed tomatoes and seasonings. Bring to a boil. Reduce heat. Simmer, uncovered, for 5 minutes or until heated thoroughly. Serve over rice.
Yield: 6 servings
