Meatloaf is a family-favorite that is easy to make and sure to please.
INGREDIENTS
1 tablespoon olive oil
3 cups chopped yellow or white onions
1 teaspoon chopped fresh thyme leaves
2 teaspoons salt
1 teaspoon black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken broth
1 tablespoon tomato paste
2 1/2 pounds ground beef
2 extra-large eggs, beaten
1/2 cup ketchup
INSTRUCTIONS
Preheat over to 350 degrees
Place all ingredients except for the ketchup in a large bowl.
With clean hands, gently combine all ingredients. Be very careful not to over combine as this can cause the meatloaf to be dense. Gently combining will ensure your final product is light and moist.
Form meat mixture into a load pan.
Brush the ketchup over the top of the meatloaf.
OPTIONAL: Wrap the meatloaf with uncooked bacon.
Bake for for 1 – 1 1/4 hours or until done.
Great served with mashed potatoes and green beans.
