The Original Buffalo Chicken Wings Recipe by Miki

Original Buffalo Chicken Wings

INGREDIENTS

1 cup vegetable oil (corn or soybean)

16 medium sized chicken wings (about 2 3/4 pounds)

1/4 cup (1/2 stick) butter, melted

2 – 10 tablespoons “Frank’s Red Hot Sauce”

1/2 chopped scallions

INSTRUCTIONS

Heat oil in large skillet over medium high heat. When oil is sizzling hot, add wings, a few at a time. Fry, turning, until golden brown, 8 to 10 minutes. Remove to paper towel to drain.

Place wings in large stainless steel bowl. Swirl melted butter over wings, covering each well with pastry brush.

Add hot sauce, spreading it with pastry brush to cover wings. Amount of sauce used determines spiciness: 

Mild:  2 tablespoons

Medium: 4 tablespoons

Incendiary: 10 tablespoons

Toss chopped scallions on top to added color and fresh crunch.

Serve wings hot with “Blue Cheese Dip” and, if you wish, celery sticks.
